This recipe was given to me by a good friend (and my favourite teacher), Samantha when I was a teenager. This recipe is for the base syrup which you then mix with sparkling water.
3 sprigs of fresh mint
1 cup sugar
1.5 cups freshly squeezed lemon juice
1 cup of water
1.25L mineral or soda water, chilled
1. Combine mint, sugar, lemon juice and water in saucepan and place on medium heat. Stir until sugar dissolves.
3. Allow to cool completely
4. Add mineral water and serve over ice with more mint as a garnish
